That's such a great idea Brad. If you want you can expand on it later too. With the seam, maybe you can attach the panels from the lower lip of the panels channel which would allow you to butt them to each other?
I think the rain water collection is actually a real good idea. Many ppl who are setting systems up are off grid and may need to collect water as well as solar. I hope that works out!
You could use a T-Type Solar panel sealing strip, or something similar at a hardware store. Automotive T-type dashboard sealing strips are very similar but much cheaper.
You should get some white reflective rocks underneath it to take advantage of the Bifacial gain. That way you don't have to worry about mowing underneath it and make extra power in the process

Instead of using mid clamps, use Ironridge Camo Hidden End Clamp from the underside=no gap between panels

I've been wondering about gutters underneath the gaps between panels. I don't think thought, that it needs anywhere near the full-size gutter between panels as would be used at the eve. I think I might bend my own as a simple 'V' using some narrow rolls of flashing. I think a 2in x 2in would be adequate but looks like 6in wide rolls (making a 3x3 'V') seems to be the smallest readily available. Too bad there isn't a common "mini-gutter".

I bet that's GREAT in the Winter time. Summer is Awesome for me But winter time I get shadows everywhere in my backyard because the sun isn't up as high as it was. How tall are the Posts?

What make and material are those panel rails? How do you feel about the weight and wind load on them? I'm guessing they are about maxxed out with those panels on them
Did you dig to mount the posts? I've thought of doing something like this but I'm always afraid it will blow away in a strong storm.
