I really like how you structured this devlog! Like you said, it feels like it turns into a learning experience devlog, which I really don't mind at all!
Procedural modelling looks super cool and if very specific movement isn't a part of the game, choosing for the standard Unity 3D movement is a good shot!

You can do procedural/coding graphics in Unity too. Shader graph can be used to move the points on your mesh. Have you ever given that a go? It's quite fun!
