Boiled Crème Treats for The Elder Scrolls V: Skyrim's Birthday

Admit it, the Crème Treats always looked more appetizing than the Sweetrolls

The Elder Scrolls V: Skyrim was released 11 years ago on 11.11.11.

Recipe Below:
For the Treats
----
3 cups (360g) All-Purpose Flour
1/4 cup (50g) granulated sugar
1/2 teaspoon salt
2 teaspoons instant yeast or active dry yeast
1/4 teaspoon nutmeg
1 large egg
1 cup (227g) milk
2 tablespoons (28g) butter, melted
1/2 teaspoon Vanilla Extract

For Glazing
----
1 cup sugar
1/4 cup water
2 Tbs butter

For Frying
-----
6 cups (907g) peanut oil or vegetable shortening, for frying
For the Boiled Crème
------
2 cups (455g) whole milk
1 tsp vanilla extract
4 ounces granulated sugar (1/2 cup; 115g)
1 ounce (3 tablespoons; 30g) cornstarch
1/4 teaspoon Kosher salt
4 egg Yolks
1 ounce unsalted butter (2 tablespoons; 30g), cut into 1/2-inch cubes


Start by making the dough, combine all the wet ingredients before mixing them with the dry ingredients, this will ensure that the yeast dissolves fully. A step I wish I would have done. Knead the dough for 4 minutes and then set it aside to rise until it's doubled in size.

Once the dough is doubled, punch it down, roll it out and cut some fat circles out. They should be at least half an inch thick. You'll get about 6 or 7 from this dough. Set the treats aside to rise again until they are poofy and springy - about 1.5 hours.

Once the treats are risen, gently drop them into 375F oil and fry until they are dep golden brown.
Pro Tip Hold them under the oil for the first 30 seconds of frying with a ladle or sieve. This prevents them from curling up into the shape of a bowl while frying. The fry time should be about 1.5 minutes per side. Leave the freshly fried treats on a rack to rest for 20 min before doing anything else to them (like poking a hole which is the next step).

For the Boiled Crème, pour your whole milk into a sauce pan with the vanilla and heat it until it's almost simmering. At that point, kill the heat, set it aside and cover it so that it doesn't evaporate or get weird milk skin on top.

While that sits, separate your eggs, add the dry ingredients to the yolks and whisk them until the texture is pale and shiny.

Once the milk is warm, not hot, stream it into the egg and sugar mixture carefully while whisking. The goal is to not cook the eggs or corn starch so do not pour piping hot milk into the mixture. After the whole mixture is incorporated, it's ready to go back into the sauce pan to thicken up. If you want to add any additional flavors to the Crème, this is the best time. Whisk constantly on medium heat until the mixture turns into a pudding consistency.

The crème needs to cool completely before it goes in the treats so make it ahead of time.

For the Caramel Glaze, add your water and sugar to a heavy bottomed pan and turn the heat to medium high until the sugar is melted and rapidly bubbling. Once it's bubbling, swirl it and watch it constantly until it hits that deep amber color - that is when you want to remove it from the heat and add the butter. Stir the butter vigorously and once it stops bubbling, that's when you want to dip your treats.

Make a hole for the Crème to go into the treats before you dip them in the glaze because the glaze hardens and you won't be able to poke a hole after they're dipped. The hole goes right in the center, on the top.

The final step is to pipe the crème into the holes on top of the treats, fill the treats as full as possible and then top them with a little dollop like you see in the game.
